Chicken Sausage with Pasta & Ninja Vegetables
lmao, I just came up with that name. (●´∀`●)
Let me explain. I didn’t feel like eating a crapload of pasta, but I still wanted that pasta taste. And I wanted vegetables, but… something not ridiculously obvious. I was in one of those weird, weird moods.
So I looked at my peeler. Looked at my carrot. Looked at my remaining spinach leaves and their stalks. Aha! Fun trick for the kiddies, folks. Or for kid-like people…
Ingredients:
1 oz. pasta of choice, I preferred fettucini for this
salt
pepper
oregano
minced garlic
2 oz. sliced chicken sausage (I forgot the brand I used)
Spinach AND their stalks, just wash throughly and cut the bottom end off.
Carrots
Few tbsps of chicken stock
A peeler or a steady hand and a knife
Yields: 1 serving, looks like a lot.
Time: 12 minutes
1.) In one pot, get pasta into already boiling, slightly salted water. Boil these guys for about 7 minutes until tender. Slice the spinach leaves and stalks in long strips and toss them in as well within the last 2 minutes of the pasta cooking.
2.) While that’s going on, in a tsp of olive oil combine chicken sausage, garlic, salt, and pepper in a pan. Cook all of this down together until golden brown and the chicken sausage is cooked through.
3.) When the pasta and spinach bites are all done, drain and add it to the chicken pan. Toss together!
4.) At the very last second, toss in your shredded carrots and a little bit of chicken stock to scoop up the bits that have been cooking and combing with all the yummy flavors.
5.) Add oregano. Toss that bad boy in a white plate and make it pretty for yourself! Seeing is the first part of a good meal.
Fast. Easy. Fun to eat. Not ninja related at all. Takes a few minutes to spot the carrots, they blend pretty well with the pasta and everything… haha… ha.. ha.
