Cinnamon Vanilla Pancakes from Scratch
Never made this before until now!
As you guys can probably tell, I normally don’t fiddle with flour. It’s messy and I’m usually at a loss with what to do with it. You think in college all we would do is make cookies but nooo, I haul myself to the library. Oh well. It’s summer now and it’s a good time to experiment, especially since I have an English guinea pig here to test things on. He really, really enjoyed these, And I hope you will too.
Fact: I like my pancakes crispy on the outside, fluffy going towards the middle.
Ingredients:
3/4 cup all-purpose flour
1 & 3/4 teaspoons baking powder
1/2 teaspoon salt (optional)
2 teaspoons brown sugar
1 tablespoon of vanilla extract
1 teaspoon of cinnamon
1/2 cup and 2 tablespoons milk
1/2 egg (okay lol, I know this sounds crazy, but I only used the yolk and some of the egg white. So uh, half?)
1 tablespoon and 1-1/2 teaspoons butter, melted
1.) Mix dry ingredients together; cinnamon, flour, brown sugar, baking power. Then, mix the wet ingredients, combine with a whisk. I did this by hand, but you can use an electric one if you want.
2.) Heat vegetable oil into a pan and pour roughly 1/4 a cup of pancake mixture into the hot pan. I can tell if one side is cooked when the raw side starts bubbling. Then flip.
3.) Serve them haphazardly and half eaten, realizing “Oh snap, I should take a picture of this for my food blog.” As demonstrated in my pictures.
The cinnamon is not obvious in my pancakes, because you can always use more, or none at all.
